Well for what it is worth...2 things kinda amazed me in that video...
#1 During the whole butchering process there were no, not one, fly that I saw...You could not pull that off in Florida as far as I know..
#2 The fat on that heifer was nice and yellow...I was always told that is a sure sign of grain fed beef which has a better flavor than grass fed beef...yes I know that flies right in the face of all this organic stuff you hear about today, but again I said flavor not necessarily the most healthy for consumption.
I give the man credit though, obviously not his first prep to quarter a beef and a darn hard worker. He did a decent job in a surprising amount of time!
