My favorite vegetable/fruit stand has opened up and I bought the best veggies there this morning...the tomatoes taste like "home grown" and I had a wonderful 'mater sandwich with Miracle Whip on whole wheat bread for lunch...yummy! Just cut up the veggies and sprinkled with Italian spices and evoo to cook later. Do I need a protein or will the veggies be enough...have to decide...decisions, decisions, decisions...
 
it wasnt busy around the stove:rofl:,( it rarely is) so i thought it was time for some potato pancakes, they came out real well.

Just chopped up the veggies for one of my favorites as shown above...can't wait until dinner tonight! Will have with left over rotisserie chicken.

Here at my house today, on this snowy day, I will pull out some chili from the freezer that I froze on Tuesday when I had the kids over for dinner ... will make a cornbread and it will probably be for both lunch and dinner or any other time today that I get hungry.

We had a little snow during the night; not much but it is only 18 degrees now with a high of 27 degrees predicted so it may be with us all day. I don't think anymore is predicted to fall though and with a high of 34 degrees tomorrow I suspect it will begin to melt and just be a slushy mess. Just enough to close the schools today.

ya talked me into cornbread, sounds to good not to make it.
I use the Jiffy cornbread muffin/bread mix...I like the sweetness that it has. Easy peasy...I even have the milk necessary to make it as when I made a cornbread on Tues and I went through the drive thru at Subway and bought a bottle of milk and the mix only takes 1/3 cup so I still have 2/3 cup left. Otherwise, I never ever have milk on hand.

Enjoy...how do you do the pork chops in the slow cooker?
 
I'm sure for folks who live in Florida think this is crazy...afterall, a few minutes with a fishing pole and you can bring dinner home...fresh!!! However, if you want something that someone else has already cleaned and filleted and all you have to do is pop it in the oven at 425-degrees for about 28 minutes...this is delicious. I'm thinking it must be a Sam's Club exclusive as it isn't even listed on the Gorton's website; however Schwan's has something with the exact same description so maybe Gorton's makes it for them as well.

Anyway, Sam's Club opened their store here in Conway yesterday; and, I bought this there today and cooked a piece tonight for my dinner. It was very good...I even had Brussel spouts like is shown on the Schwan's site. Each piece is frozen separately and you can take out just what you need. My box had seven pieces in it so I'd estimate that they are from 4-5 ozs each.

The box of cod at Sam's Club weights almost 32 ozs; while the one from Schwan's only weighs 24 ozs and costs about $4 more.

Made my first meal in my new 2 & 1/2 qt oval/casserole Crock Pot today! I can tell already, this slow cooker is likely to see more time on my counter than in the cabinet.

It really is quite small, this picture shows it in comparison with other items.

It is rather shallow (maybe about 4" to 4 & 1/2" deep). I started by putting 4 1/2" slices of yellow onion on the bottom and browned both sides of a 1 lb chuck steak, approx 1 & 1/4" thick (for chuck it was pretty lean) on the stove and laid it on top of the onions. I then put a good sized handful of baby carrots and 6 ping-ball sized new/red potatoes (cut in half) on top of the steak. I used about 1/2 a package of dry onion soup mix mixed in 1/2 cup of water and poured over top of it all. I cooked it on high for about 3 hours and then added 12 frozen baby Brussels spouts and cooked for about another hour on high. This filled the crock up leaving approximately 1 inch from the top. Oh, and the crock has a glass lid rather than some which have plastic. I prefer the glass and was happy to see that!

The steak was fall-apart tender and the veggies cooked just right! After eating it tonight, I divided the left overs into two containers and froze one and will eat the other one tomorrow. Was yummy! Kroger had the chuck steak on sale for $1.99 a pound and all in all, I figure the entire pot full of 3 meals cost about $3.50 at the most for 3 good meals! I added one of the individual sized cups of no-sugar-added granny smith apple sauce and am fully satisfied that I had a good home-cooked fairly healthy meal, which was extremely easy and inexpensive.

For recipes calling for a can of cream-of-something soups, I think you would be best to only use 1/2 a can and freeze the other half for the next recipe.

tomorrow night for my daughter-in-law and myself...using only two chicken breast (they are big ones about 2/3 lbs each and Newman's Own marinara pasta sauce instead of mixing up all the spices with the crushed tomatoes.

Will also cook some of these noodles supergreens.jpg to go along with it...

and with a tossed salad it will be dinner before she leaves to meet up with son in Atlanta and drive over to Fort Rucker, AL for grandboy's graduation from flight school and then she and son will take off for Dubai where she will stay for 4 weeks before she comes back and then we get serious about plans for grandboy's wedding the end of May...exciting times for our family.
 
Today I cooked a spaghetti squash and made a spaghetti sauce to go over it and pretend that I was eating a big plate of pasta! I normally make my sauce with a base of Newman's Own Roasted Garlic pasta sauce; however, I had a $2 coupon for Classico pasta sauces so, I purchased the Traditional Pasta Sauce to which I added ground beef, fresh onion and mushrooms. Wow, that sauce is delicious. I know for the purist amongst you out there, jarred spaghetti sauce is a no-no; but, I know I can't improve on the professionals so I don't even try. Anyway, I was really surprised at how good the Classico sauce was as I am usually very loyal to Newman's Own.

I can and do recommend Classico Traditional Pasta Sauce to those of you who are so inclined. classico.jpg

Just printed out the recipe...already chopped up the onion, garlic and water chestnuts and put in the fridge. Yum Yum...chicken is thawing...

Had to buy the sesame oil, hoisin sauce, soy sauce, rice wine vinegar, chili garlic sauce, ginger and water chestnuts as these are staples that I don't usually have "on hand"...in fact, I have never purchased any of those ingredients before in my entire long life.

Ok, my review...verdict...

Was easy to make; but, requires constant attention. No walking away from the stove.

It was tasty but just a little too spicy for my taste. If I were make it again I would reduce hoisin sauce from 1/3 to 1/4 cup and the Asian chili garlic sauce from 1 Tbs to 1/2-3/4 Tbs.

The recipe called for butter lettuce; however, I found it to be too delicate (as I thought it would be, but decided to follow the recipe to the letter) and as soon as I tried to pick it up and wrap it around the chicken mixture the lettuce split and fell apart, so I cut it up and ate it with a fork. I have a brand new head of green leaf lettuce (which I will use for the left overs) tomorrow, those leaves should hold up much better. Every P.f. Chang that I've been to serves it with iceberg lettuce which I never ever buy--to me, iceberg lettuce is nothing more than hard water and has no nutritional value (and this is my veggie for this meal).

Just a side note, I've never used ground chicken before and was surprised at how soft and mushy it is while cooking. I have used ground turkey which is much more firm. This was 92% lean and am assuming it is all white meat...but, not sure.

All in all, not bad...won't throw out the left overs and will save them for tomorrow--a fairly good one-pan meal for me. Mine isn't as pretty as that shown in the video and recipe...I put the sliced onions in near the end of cooking as called for in the recipe and didn't save any of the green tops to sprinkle on top which adds to the "prettiness."

I don't recall ever before buying and cooking a frozen pizza...I always just figured they would be garbage, if I am going to eat pizza I want a really yummy one...I am not talking about those that a recently put together at places like Sam's Club and are basically fresh and ready to pop into the oven when you get home. I am talking about the cheapo ones that are in the frozen food counters at grocery stores that have expiration dates of months and months or even a year down the road.

However, today I was putting together a "clicklist" order for Kroger that I would pick up this afternoon and in their weekly sales flyer amongst the "Buy 5 save $5" items (I had already chosen 4 of the items and was looking for a 5th) I found Newman's Own Thin and Crispy Supreme Pizza that is regularly priced at $4.99 and save $1 in this 5-$5 sale plus I downloaded to my loyalty card a 50-cent coupon making the final price $3.49. So, I added that to my list and picked my order up around 2 p.m. Tonight I cooked said pizza, and OMG it was delicious! The entire pizza has 960 calories (it really is a very thin, thin crust! which I love!), so I ate half of it along with a salad with Newman's Own Lite Honey Mustard Dressing; so, for about 550 calories I had a yummy dinner. I highly recommend this pizza for anyone who is just craving pizza and doesn't want to pay $18-20+ to have one delivered. Besides all the profits from Newman's Own goes to charity!

Happily, when I opened the box the pizza looked exactly like the picture on the box! Well, except for the crust--it wasn't quite as brown as the picture until after I baked it for 12 minutes at 425 degrees.
 
Tonight I just had a newly discovered Bird's Eye product and it was yummy and I made an entire meal on it. It had a mere 240 calories and was supper filling. For two it would make a side dish with an added piece of meat or fish or in slick's case a few slices of bacon. I just ate the who package which was about 10 ozs and fill stuffed. Of course one could add a piece of meat or fish and also eat the whole package if they wanted too, it would have been too much for me, of course I think as a left over for the next day it would be perfectly fine.

I have also tried the new Bird's Eye (at least they are new to me as I hadn't seen them before a few weeks ago) Protein Blends. I have tried the California, Italian, and New England Style ones and they are all really tasty and filling. I ate the Chickpea and Spinach Superfood Blends ^ yesterday and it was just as yummy as the other one! I can highly recommend these.

Over the past couple of weeks I have eaten all three of these frozen meals and found each one of them to be surprisingly good for food requiring only to be heated in a non-stick pan for from 9-13 minutes. Each bag made two meals for me and on the Tuscan braised beef meal I added about a half bag of frozen Brussel spouts because I needed the green leafy veggie. Each bag will feed two people and if you are bigger eaters you could certainly add a salad, some type of artisan bread or rolls, or a dish of fruit to round out the meal. These meals make for "good eating" without much prep or work in the kitchen.

We have tried both brands and really enjoyed the Bertolli and will purchase that again. The PF Changs not so much but as they say to each their own, we all have different tastes :bigwink:
 
I love breakfast for dinner...made an omlet with onions, mushrooms, spinach, a little cheddar cheese and two eggs. It was yummy, and I thawed out some frozen sliced peaches for desert. It was a perfect dinner in my opinion.
